Our
founder, Dr. Juan M. Palomar, who retired from his medical practice in 2002,
arrived from Spain in 1971 and for 30 some years has missed the good products
of his native country. In 1999, he
started the production of VELETA Extra Virgin Olive Oil using rare
“Lechín” olives from the centenary trees at his Dominio Buenavista farm in
the South of Spain. Today we can enjoy this extraordinary staple, rated one
of the best olive oils from the Iberian Peninsula. Beside the
Olive Oil, we travel to Spain tasting and searching for delectable flavors.
Our Premium Sherry Vinegar is produced using the “solera” method in
one of the best wineries of Jerez. The VELETA Artisan vegetables and
preserves come from Sufli, a little village in the mountains of Almería,
Spain, where cooking and food preparation has been a tradition for hundreds
of years. Our VELETA seafood products come from Galicia, Spain and are
sold in the fanciest Gourmet Stores of the Peninsula. We
constantly search and visit Spain, looking for anything that will entice your
palate.
About
Dominio Buenavista in Spain The climate
and eco-structure of the Dominio Buenavista Estate located in Ugíjar,
Granada, Spain is unique to the southern Mediterranean basin. On the Estate are
groves of olive, almond, fig, persimmon, lemon and orange trees. The
vineyards of Cabernet Sauvignon, Tempranillo, Chardonnay, and other varietals
used to make the wines of Dominio Buenavista are also located at the Estate. The village
of Ugíjar is located on the south bank of Sierra Nevada, in the province
of Granada and rests in one of the oldest wine producing areas
of Spain. Around the year 2500B.C., 4,500 years ago, the
inhabitants on the south part of the Iberian Peninsula managed to domesticate
the “Vitis Vitis” from which the actual “Vitis Vinifera” evolved. Together
with wine, olive oil has been a staple in the diet of the Mediterranean
people since the bronze age. The south part of Spain provides an exceptional
microclimate for the growth of olive trees, vines and a whole host of other
agricultural products. Ugíjar at 650 meters above
sea level is nestled and protected from extreme cold temperatures by the
tallest mountains of Spain, the Mulhacen and the Veleta, to the
north and the Mediterranean Sea, 15 kilometers to the south. The
night sea breeze cools our trees and vines during the hot summer nights and
slows the ripening process. Harvesting of the grapes is done at the end of
August. The Lechin Olives are picked from in January. For more
