VELETA Empanada

 

Ingredients:

·         1 jar Veleta Pisto Almeriense

·         1 can Veleta Spanish White Tuna

·         1 jar Veleta Roasted Red or Green Peppers  (Threaded into 1/4 inch strips

·         Veleta Extra Virgin Olive Oil

·         1 package puff  pastry or refrigerated pie crust (note use 10in pie pan)

·         Flour for rolling out pastry

·         1 egg beaten

 

Directions:

Pre-heat oven to 400°F.  Thaw frozen puff pastry according to package instructions.  Roll out pastry to (two)10 x 14 rectangular portions.  Place one pastry on baking sheet (previously coated with Veleta Extra Virgin Olive Oil).  Spread evenly over the top of the pastry in layers, starting with Veleta Pisto Almeriense and Veleta White Tuna.  Place Veleta Roasted pepper strips over top of tuna.  Carefully place top crust over layered ingredients.  Brush lightly with beaten egg and seal edges.  Place several small slices in top crust for venting during baking.  Bake for 15 to 20 minutes.  Remove from oven and serve.

 

Oven temp 400°F   Serves 6

Suggested alternatives:  May use cooked ground beef, sausage, chorizo, olives, artichokes or other favorite toppings in empanada as you choose
