VELETA Huevos Al Plato (eggs to the plate)

 

Ingredients:

·         1 jar Veleta Pisto Almeriense

·         Veleta Extra Virgin Olive Oil

·         2 eggs

·         Salt and pepper to taste

 

Directions:

Heat oven to 400° F.  In ceramic baking dish add 1 tbsp Veleta Extra Virgin Olive Oil.  Add 1 jar Veleta Pisto Almeriense, smooth over dish making two small wells in center.  Drop two eggs in center of dish, season with salt and pepper to taste.  Place in oven and bake for 15 to 20 minutes until egg is cooked to preferance.  Serve with crusty bread
