VELETA Pasta

 

Ingredients:

·         1 jar Veleta Pisto Almeriense

·         1 can Veleta Spanish White Tuna

·         1 jar Veleta Roasted Red or Green Peppers  (Threaded into 1/4 inch strips)

·         1/4—1/2 cup Red wine

·         1 clove of garlic minced

·         Veleta Extra Virgin Olive Oil

·         Pasta of choice  (four to six servings)

·         Salt

 

Directions:

Heat 2 to 3 tbsp Veleta Olive Oil over med high heat in 1 qt. cooking pot.  Add garlic and sauté just until garlic starts to turn color.  Add Veleta Roasted Peppers (threaded reserving liquid), sauté gently for 2 to 3 minutes.  Add red wine sauté until wine is reduced.  Add Veleta Pisto Almeriense, Veleta Tuna, and liquid from peppers, season with salt to taste.  Simmer over med low heat until heated throughout.  Cook pasta according to package instructions.  Drain and serve pasta with generous topping of sauce.  May garnish with shredded Manchego cheese.

 

Serves 4-6

Suggested alternatives:   May substitute sautéed ground beef, chicken, or shrimp in place of tuna (add before peppers).  Or for vegetarian favorite omit tuna.
